Capay Oaks Farm is located in the town of Guinda. The proprietors, Ron and Sandi Lutsko, with their two daughters, began farming olives in 2004. The region is particularly suited to olive production of the highest quality. Their olive orchards grow on a bench of rich alluvial soils adjacent to a seasonal stream against the ridge that defines the western edge of the valley. They farm their orchard personally, and time their harvest to hit peak ripeness to insure the fruit contains the full range of flavors.

Their fine oil is crafted from the Spanish olive variety, Arbequina, known for its sweet grassy flavor and excellent production. They hand harvest in small batches and get them to press within four hours. While the oil from this fruit is renown for its grassy, herbaceous flavor as it ages the flavor smoothes out and the oil bears just a hint of grassiness with rich complex undertones of ripe fruit remaining. You will find this fresh and fruity oil to be an essential ingredient to fine cooking and dining.
